Meat Curing
Pick your group’s project to make pancetta, coppa, or bresaola. Each participant will cure a cut of meat, and I will age it for you to include on your own charcuterie board in a few months. This class involves 2-3 sessions depending on the type of meat selected.
Smoked Salmon or Gravlax
We’ll start with a tasting of salmon cured in a variety of ways, and then you’ll be guided in how to cure salmon to take home and serve. You’ll learn about equilibrium curing to keep from getting an overly salty product, and how to layer flavor to customize it to your preference.
Fermenting Vegetables
Learn how to make sauerkraut, kimchi, or other fermented vegetables to include in your meal plans. I’ll show you how to ferment in a crock, a bucket, or a jar. Sourdough Baking
This class will teach you how to to make wonderful loaves of sourdough bread. We’ll cover recipe formulation, dough process, forming loaves, and baking. Also, how to turn discarded starter into excellent crackers. We will taste some bread with some tasty homemade accompaniments. Each participant will get sourdough starter and bread to take home.
Ice Cream Making
A simple way to make ice cream base to create your favorite flavors. We will sample some ice cream, and make a batch of ice cream mix for each participant to take home. Don’t have an ice cream maker? No problem, I will freeze them for you in our Italian gelato machine!
